There aren't very many houses in Paris. It is mostly apartments that are either rented or owned. There are many agencies that rent apartments in Paris. Google "Paris Vacation Rental" and select one.
Note that many buildings in Paris do not have elevators, so if you rent an apartment on the 5th floor (which is the 6th floor in the US), you could have a lot of stairs to climb. Make sure to read the listing carefully.
Also note that top-floor apartments are not always well-insulated, so it might be very hot in summer and very cold in winter. Apartments on the 1st floor usually have higher ceilings, but you also have a lot of traffic noise. If a building has an elevator, your best bet is an apartment on the 4th floor. If there's no elevator, try for 2nd or 3rd floor.

You can find all kinds of places for rent on Craigslist. Many of them have pictures and maps on location in Paris.

Last year I rented a nice apartment from a lovely Parisian owner in the 17th district, near the Montmartre. Close to Metro shops restaurants, the best experience was, I lived like a Parisian, and personally I would never rent a hotel room, too expensive too impersonal.
